Salted salmon

Happy Tuesday friends!

On Saturday me and my boyfriend went to the market and finally bought 2 kilos of fresh salmon. Finally – because we were going to do it for so long! It was not even a question what to do with it, obviously, we were going to salt it. If you like salted salmon as much as we do, you will love this recipe!


Buy the most fresh salmon you can find. Tip: when you smell it, it doesn’t have fish smell to it, it smells like sea water. I do not recommend to buy frozen one.

For 1 kg of filet of salmon mix together:
1/4 cup of sugar
1/4 cup of salt
1/8 cup of cognac or vodka
optional:
dried dill
rose pepper (whole)

The process is quite easy.
Dry salmon with paper towel. Cut in 2 equal parts. Put 2 tablespoons of mixture on the bottom of plastic or glass container. Choose it big enough to fit 1 piece of salmon without squeezing it. Put 1 piece of salmon (skin on the bottom), spread 2-3 tablespoons of mixture on it evenly. Cover with 2d piece of salmon (skin will be on top, it will be like a sandwich with skins on the outside and mixture in between). Spread the rest f the mixture on skin of 2d piece. Cover it with plastic and put in the fridge. In 15-17 hours flip the whole thing, so now the skin of the top piece is on the bottom. Put back in the fridge and wait for another 15 hours. After that you can start trying it, and if you think it is enough salted – remove from the juice, wipe with paper towel, slice and enjoy! You can keep it without the juice in the fridge for another 2 days. I guess you can also freeze it, but I never tried it (I love it too much, so usually it is gone by the end of the first day!)
