Don’t think I am obsessed with oranges (may be a little bit), just have some really juicy and fresh ones right now.
Usually I am not a big fan of pound cakes because in my opinion they are all so bland and dry… But not this one! This one is one of my favourite – it is moist, flavourful and soooo tasty!
250 g butter (room temperature)
250 g sugar
1 tbsp orange zes
250 g flour
1 tsp baking powder
100 g fresh orange juice
icing sugar and water for icing
Mix butter and sugar until it became white and fluffy, add eggs one by one, continue mixing. For this I use mixer with paddle attachment on low-medium speed. In separate bowl mix flour and baking powder, add it slowly to egg-butter mixture. Add orange juice. Pour in buttered pan (I used two 19 cm pans, but it will fit in one slightly bigger one, just adjust baking time), put in preheated oven (335F) for about an hour.
When it is done, remove from the pan immediately, put on the rack to cool down.
Prepare icing. There is no recipe for making an icing. Just mix icing sugar (approximately 150-200g) with 3-5 tbsp of water until desired consistency. Pour on the cake, let it set.
