Sometimes I just want something light, fresh and tasty. And this focaccia with tomatoes and balsamic is exactly it!
Focaccia (I love from ACE bakery, but if you know better one, please let me know!)
Mixed green salad
Balsamic vinegar (I prefer thick one)
Lemon-olive oil dressing (or any other – it is up to you!)
First, cut focaccia lengthwise, brush with olive oil and toast this side on the pan. Mix greens with dressing and some salt, put on toasted side of focaccia. Slice tomatoes, put on top. Put some salt and pepper, finish with balsamic. If you want you can add sliced mozzarella cheese and anchovies.
