Easter chocolate cupcakes

Happy Easter!

Today I did not bake traditional Russian cake for Easter as usually because I got a request from 4-years old birthday girl to make cupcakes. And I did. Just chocolate flavour with vanilla french buttercream and chocolate eggs on top.

Ingredients (for approximately 16 standard sized cupcakes):

1 1/3 flour
1/4 tsp baking soda
2 teaspoon baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon of salt
3 tbsp butter, room temperature
1 1/2 cup sugar
2 eggs
3/4 tsp vanilla extract
1 cup milk

2 large eggs
2 egg yolks
1 cup sugar
1/4 cup water
1 1/4 cup butter (room temperature)
1 tsp vanilla extract
green colour and chocolate eggs for decoration

I made cupcakes one day before, they can be stored in a fridge in the sealed container up to 2 days. Buttercream was made just before decoration and serving. However, you can make it in advance too, it should be refrigerated and softened before use.

For the cupcakes, mix dry ingredients (flour, baking soda, baking powder, salt, cocoa powder). If your cocoa powder is chunky, sift it. Soft butter mix with sugar and vanilla extract using mixer with paddle attachment on low speed until it is almost white and fluffy. Add eggs (one at a time), mix well. Add milk and dry ingredients. Fill the muffin cups 3/4 full.  Bake in the preheated oven (350F) for 20-25 minutes. Let it cool down on the rack before decorating.

For the buttercream, put eggs and egg yolks in the mixer with whisk attachment, whip on medium speed. At the same time, put sugar and water in the small pot and boil it until it reaches soft-ball stage (121C or 238F). Remove from the heat and immediately pour in the eggs, while whipping them on the high speed. Be very careful – it is very hot! In 1-2 minutes reduce the speed to medium and continue to whip until it is room temperature. Cut butter in small pieces (1 by 1 cm) and add to the eggs when it is cooled down. Add vanilla and green colour (for my colour you need only about 7 drops of it). Mix until smooth and shiny. Put in piping bag and pipe your decoration. I used tip for making grass. Put eggs on top.
